Autumn reminds us about comfort eating somehow. The reason could be lack of sunshine or cold wet days. Usually when we choose food for comfort, we tend to choose fatty, sugary and salty foods. But unlike many other so called comfort foods this soup is highly nutritious and healthy.

Growing your own vegetables is always very satisfying and so is making a curry.There are plenty of small pumpkins, chillies, tomatoes and spinaches in my garden now. So I always find ways to use them up. I usually make this curry with butternut squash, but I used small pumpkins instead of squash this time just because there are so many of them to pick.

This simple and easy to make soup is an irresistible combination of aromatic spices and sweet and nutty squash. Mint leaves – few sprigs
Honey dew melon – 2 Cups
Juice of half a lemon
Method
Blend everything together. Decorate with Mint Leaves and serve chilled.
