Autumn comfort soup in a bowl

Autumn reminds us about comfort eating somehow. The reason could be lack of sunshine or cold wet days. Usually when we choose food for comfort, we tend to choose fatty, sugary and salty foods. But unlike many other so called comfort foods this soup is highly nutritious and healthy. 

Spinach and Butternut Squash Curry

Growing your own vegetables is always very satisfying and so is making a curry.There are plenty of small pumpkins, chillies, tomatoes and spinaches in my garden now. So I always find ways to use them up. I usually make this curry with butternut squash, but I used small pumpkins instead of squash this time just because there are so many of them to pick. 

Curried butternut squash soup

This simple and easy to make soup is an irresistible combination of aromatic spices and sweet and nutty squash. Butternut squash is an excellent source of orange colour providing beta-carotene, an antioxidant. They can protect our body from free radicals.  On top of that, they provide good amount of vitamin C, B5 and B1, folic acid, potassium and fibre as well. Both cumin and fennel seeds are good for the health of digestive system.

Pineapple and cranberry salsa with tarragon

Immune boosting, low calorie food packed with antioxidant, anti-inflammatory, anti-histamine and digestion aiding compounds.This recipe is ideal for Hay fever management. If cranberries are not in season, use 1/4 cup dried cranberries as they are high in sugar. 

Salad is very vibrant and fresh tasting and it will make you feel good and better.

Minty Melon Drink

Very refreshing, cool drink. Ideal for picnics and BBQs.

Ingredients

Mint leaves – few sprigs
Honey dew melon – 2 Cups
Juice of half a lemon

Method

Blend everything together. Decorate with Mint Leaves and serve chilled.
