Tarragon Hummus

Ideal Healthy Snack

1/2 cup cooked chickpeas
2 pickled gherkins
1 green chilli
1 tbsp lemon juice
1/4 tsp salt
3 tbsp chopped tarragon leaves

Blend everything together except tarragon leaves. Add bit of water to get right consistency.
Mix it with chopped tarragon leaves. Serve with vegetable fingers.

My quinoa stuffed roasted mini pumpkin is perfect for any day of the year, but it would be much fun for kids if we make it when we are still in the mood of halloween. Sweet,Sour & Spicy Root Salad

Colourful nutritious salad. Celeriac can be replaced with carrots as well.

Celeriac - 1/2 - peel and cut into chunks
Beetroot - 3 - peel and cut into chunks
Wild rocket leaves - 1 cup
Lemon Juice - 3 tbsp
Red Onion - 1/2 - finely chopped
Green Chilli -1- finely chopped
Salt - 1/2 tsp
