Wholegrain Pasta with Healthy Basil and Walnut Pesto

Heart healthy, very low in cholesterol, quick and easy recipe. Ideal for lunch boxes.

Basil leaves - 30 gms
Walnuts - 10 nos.
2 pinches of salt
1 pinch crushed black pepper
1 clove garlic
1 tsp extra virgin olive oil
Wholegrain pasta - 1/2 cup

Cook pasta in boiling salted (1 pinch of salt) water until it is soft. Drain and return to pan.
In a food processor process basil, walnuts, garlic, a pinch of salt and black pepper, scraping down sides occasionally, until almost smooth. While processing, add water in a slow, steady stream. Pour just enough water to get a puree consistency. Process to combine.
Add pesto to pasta. Stir to combine. Serve hot. Drizzle extra virgin olive oil. Enjoy..
