Roasted Mushrooms stuffed with Mediterranean Couscous

Quick and easy, Nutritious Healthy Recipe. Ideal for Dinner.

Large Mushrooms -4-peeled
Couscous - 160gm
Raisins- 2 tbsp
Salt - 1 tsp
Crushed black pepper - half tsp
250 ml boiling water
Composed Olive oil - 2tsp
Bay leaves - 2
Onion - 1- Finely chopped
Garlic - 2 cloves - Finely chopped
Aubergines - half- Finely chopped
Red Pepper- Half - Finely chopped
Yellow Pepper - Half - Finely chopped
Cinnamon powder - 2 pinches
Balsamic vinegar - 2 tbsp
Tomato -3-sliced

Preheat oven to gas mark 4. Spray the mushroom with oil and cook in the oven for 20 mins.
Mix the couscous with raisins, half tsp salt & crushed black pepper. Add boiling water to this.
Stir well, cover with cling film (or keep it in airtight container) & allow to fluff up.
Heat oil in a frying pan. Add bay leaf, onion and garlic. Stir well for a minute and add all other chopped vegetables.
Stir fry for 2 minutes. Add cinnamon and rest of the salt. Mix well and pour balsamic vinegar.
​Turn off the heat quickly, add cooked couscous to this & mix well. Stuff the cooked mushrooms with this. Decorate with sliced tomatoes.
